Filipino cuisine has always been known to be regional due to the country’s large archipelago  made up of 7,640 islands. As a nation, Filipinos source ingredients locally, thanks to its rich  natural resources, which vary from island to island. Named as one of the emerging flavors in recent years, it is our chance as Filipinos to show the world the beauty of our cuisine. To  non-Filipinos, now is the time to understand and taste our diverse culinary palette!

Filipinos love to eat and food is often the center of the party. This class aims to take you to a  journey of the senses: discuss our culinary history, influence, and its promising global potential. Students will learn the different dishes that we often prepare during fiestas and other celebrations. This 60-minute class will feature two recipes per session, and in-depth discussion through online videos.

The class will cover:

Week 1 Pulutan / Merienda:

Week 3: Meat Dishes

Week 4: Vegetables

Week 5: Dessert “Minatamis”

  1. Ube Leche Flan Cupcakes
  2. Brazo de Mercedes

Description

Chef Mafe is an alumni of Le Cordon Bleu London England. She has worked in hotels and restaurants in Manila as Sous Chef and Restaurant Consultant. She also worked at Center for Culinary Arts, Manila as a Chef Instructor for more than a decade. Chef Mafe has instructed Filipino celebrities like Pauleen Luna-Sotto, Lara Quigaman, Marco Alcaraz and more. In 2010, Chef Mafe opened The Cuisinier Brasserie Restaurant/Culinary Studio and Glory Hogs, Quezon City.
